Revert "feat: Implement @uncinc/stylelint-config and @uncinc/eslint-config"

This reverts commit 8329aaf8, because this blocked a build. An error was thrown during the preflight check -- react-scripts requires eslint version ^6.6.0, but in the reverted merge we introduce version 7.3.0.
